Cooking Chicken Relleno

During special holidays, we often cook Chicken Relleno. Just this last Thanksgiving, we roasted a total of three of these deliciously stuffed chickens. With Christmas and New Year’s Day nearing, we’re expecting to cook even more.



Chicken Relleno is a roasted chicken that has been deboned and stuffed with a mixture of ground pork, Filipino hot dogs, and eggs. The pork stuffing is the key component to the dish. I first learned how to make the pork stuffing recipe from my Dad. With Chicken Relleno, the hardest part is to debone the chicken. Once you’re able to do that, this recipe is fairly simple to follow.

What’s Cooking for Thanksgiving?

Hopefully, all of you are having a great Thanksgiving with your friends and family, whether it’s sitting down and eating or cooking together. Here’s what’s cooking in our kitchen…



Not your average roasted turkey, but Chicken Relleno – a deboned roasted chicken, stuffed with ground pork, Filipino hot dogs, and eggs. We usually cook Chicken Relleno during the holidays. After Thanksgiving settles down, we’ll have the recipe posted for you to try at home.





L.A.’s Own Roscoe’s Chicken ‘n Waffles

Chicken and waffles. Who knew that these two together would make an unforgettable combination that would be well known throughout Los Angeles? Roscoe’s House of Chicken & Waffles doesn’t need an introduction. This L.A. institution has been mentioned everywhere. I’ve known about Roscoe’s for quite some time, but I never had to opportunity to experience it. With Rose and I in L.A., I made sure that one of the first food stops we made would lead us to good old chicken and waffles.



A Roscoe’s was close to where we were staying so, we decided to grab have lunch. We were greeted by the brightly lit red neon Roscoe’s sign with their signature chicken mascot.



After driving for five hours, you can definitely work up an appetite. The Scoe’s combo would be enough to satisfy that hunger. I think a ¼ of crispy fried chicken and two golden waffles with a side of syrup will do it. Just let that the syrup pour. The waffles soaked up the syrup like a sponge which almost just made the waffles melt in your mouth. The sweet and savory on a plate worked.



We also had an order of the red beans and rice. A hearty serving of red beans were served on top of fluffy white rice. This was definitely filling. The dish included the same crispy fried chicken and a piece of moist cornbread.



And just when we thought our meal was over, the table next to us got their order of fried chicken with gravy. We couldn’t leave Roscoe’s without trying their gravy. We were pretty familiar with the chicken and gravy combination, since Jollibee, one of our favorite local spots, has been doing it forever with their fried chicken. It gave us something to compare Roscoe’s gravy to. Our take on the gravy? Don’t order the fried chicken without it. It’s available on the side. I thought the gravy just brought out more flavor to everything.

We left Roscoe’s satisfied. It was a fulfilling well deserved meal, especially after that long drive to L.A. We were anxious and ready to take on the food Los Angeles had to offer.

RoliRoti’s Porchetta Sandwiches

Sometimes standing in line for a sandwich and having the sun scorch the back of your neck is well worth it. For a Porchetta sandwich from RoliRoti, I’d do it again without hesitating. With the line about fifteen people deep, it was only a matter of time until we reached the front to order our sandwiches. The aroma of roasted chickens and pork filled the air with each step taken.



Right when we reached the front of the line we were greeted by the beautiful sight of the Porchetta being prepared for sandwich orders.



The hasty slicing action of the roasted pork led to all of the juices drip onto the cutting board. The folks at RoliRoti know not to let the juices go to waste. A quick grab of a piece of bread to wipe down the cutting board to absorb all of what was left over ensured that you wouldn’t miss any of the flavors.
