			<content:encoded><![CDATA[<p>During special holidays, we often cook <a href="http://www.spotsfordates.com/11/2009/updates/whats-cooking-for-thanksgiving-chicken-relleno">Chicken Relleno</a>.  Just this last Thanksgiving, we roasted a total of three of these deliciously stuffed chickens.  With Christmas and New Year&#8217;s Day nearing, we&#8217;re expecting to cook even more.  </p>

<p>Chicken Relleno is a roasted chicken that has been deboned and stuffed with a mixture of ground pork, Filipino hot dogs, and eggs.  The pork stuffing is the key component to the dish.  I first learned how to make the pork stuffing recipe from my Dad.  With Chicken Relleno, the hardest part is to debone the chicken.  Once you&#8217;re able to do that, this recipe is fairly simple to follow. </p>

<p><b>Ingredients</b><br />
1 Whole Chicken (Deboned)<br />
Soy Sauce<br />
Lemon Juice<br />
1 Bulb of Chopped Garlic<br />
1 Can of Sprite<br />
2 tbs. Sugar<br />
1 1/2 Pounds of Ground Pork<br />
2 Shredded Carrots<br />
1 Large Diced Potato<br />
1/2 Cup of Raisins<br />
6 Beaten Raw Eggs<br />
Salt<br />
Pepper<br />
2 Filipino Hot Dogs<br />
2 Sliced Hard Boiled Eggs</p>
<p><b>Steps</b><br />
You must start with a whole deboned chicken.  It is easiest to start the deboning process by slicing the back skin portion of the chicken and detaching the meat from the bone.  Work your way from the back, the wings, the thighs, and finally the breast.  Later, you will sew back together the skin opening, after stuffing the chicken.</p>
<p>Next, in a large bowl, combine 1/2 Cup of soy sauce, 1/2 Cup of lemon juice, garlic, Sprite, sugar, and 1/2 tbsp. of pepper.  Place the whole deboned chicken in the marinade for 2-3 hours.  We prefer to marinade the chicken overnight in the refrigerator.</p>
<p>In another large bowl, mix together the ground pork, eggs, carrots, potato, raisins, 1-2 tbs. of salt, and 1 tbsp. of pepper.  While mixing, begin to boil two eggs that will be sliced and placed into the stuffing later on.</p>
<p>When it comes to the stuffing part, following these step by step photos below might help.  First take some of the pork stuffing to fill the chicken.  Next, lay out the hot dogs and eggs inside.  Take the remainder of pork stuffing to fill the chicken again.  The whole chicken should be very plump by now.  With a sewing needle and thread, stitch the skin of the chicken to enclose the stuffing.   </p>

<p>Bake the chicken in a deep pan for 2-2 1/2 hours at 350°F.  </p>
<p>With Chicken Relleno, you should be able to cut into the chicken and serve slices of it, similar to a meatloaf.</p>

			<content:encoded><![CDATA[<p>Chicken and waffles.  Who knew that these two together would make an unforgettable combination that would be well known throughout Los Angeles?  Roscoe&#8217;s House of Chicken &#038; Waffles doesn’t need an introduction.  This L.A. institution has been mentioned everywhere.  I&#8217;ve known about Roscoe&#8217;s for quite some time, but I never had to opportunity to experience it.  With Rose and I in L.A., I made sure that one of the first food stops we made would lead us to good old chicken and waffles.</p>

<p>A Roscoe’s was close to where we were staying so, we decided to grab have lunch.  We were greeted by the brightly lit red neon Roscoe&#8217;s sign with their signature chicken mascot.  </p>

<p>After driving for five hours, you can definitely work up an appetite.  The Scoe&#8217;s combo would be enough to satisfy that hunger.  I think a ¼ of crispy fried chicken and two golden waffles with a side of syrup will do it.  Just let that the syrup pour.  The waffles soaked up the syrup like a sponge which almost just made the waffles melt in your mouth.  The sweet and savory on a plate worked.</p>

<p>We also had an order of the red beans and rice.  A hearty serving of red beans were served on top of fluffy white rice.  This was definitely filling.  The dish included the same crispy fried chicken and a piece of moist cornbread.</p>

<p>And just when we thought our meal was over, the table next to us got their order of fried chicken with gravy.  We couldn&#8217;t leave Roscoe&#8217;s without trying their gravy.  We were pretty familiar with the chicken and gravy combination, since <a href="http://www.spotsfordates.com/08/2008/restaurants/unioncity-ca-jollibee">Jollibee, one of our favorite local spots, has been doing it forever with their fried chicken</a>.  It gave us something to compare Roscoe&#8217;s gravy to.  Our take on the gravy?  Don&#8217;t order the fried chicken without it.  It&#8217;s available on the side.  I thought the gravy just brought out more flavor to everything.</p>
<p>We left Roscoe&#8217;s satisfied.  It was a fulfilling well deserved meal, especially after that long drive to L.A.  We were anxious and ready to take on the food Los Angeles had to offer.</p>

			<content:encoded><![CDATA[<p>Sometimes standing in line for a sandwich and having the sun scorch the back of your neck is well worth it.  For a Porchetta sandwich from <a href="http://www.roliroti.com">RoliRoti</a>, I’d do it again without hesitating.  With the line about fifteen people deep, it was only a matter of time until we reached the front to order our sandwiches.  The aroma of roasted chickens and pork filled the air with each step taken. </p>

<p>Right when we reached the front of the line we were greeted by the beautiful sight of the Porchetta being prepared for sandwich orders.</p>

<p>The hasty slicing action of the roasted pork led to all of the juices drip onto the cutting board.  The folks at RoliRoti know not to let the juices go to waste.  A quick grab of a piece of bread to wipe down the cutting board to absorb all of what was left over ensured that you wouldn’t miss any of the flavors. </p>

<p>The sandwich had only a few ingredients.  Tender seasoned slices of Porchetta, with sweet caramelized onions, all topped with fresh arugula.  One bite will had me saying, “Wow.”  The flavors of the roasted pork made me reminisce about Filipino roasted pork.  It was almost like having <a href="http://www.spotsfordates.com/10/2008/updates/special-occasion-delicious-lechon">lechon</a> in a sandwich, but tastier, and more filling.</p>
<p>Keep in mind, RoliRoti isn’t a restaurant.  They are a gourmet mobile rotisserie catering company which you can find at most farmers markets in the Bay Area.  Our particular experience with RoliRoti was at the <a href="http://www.ferrybuildingmarketplace.com">Ferry Plaza Farmer’s Market</a>.  Even though they are mobile and operate out of the back of their trucks, the quality of their food isn’t sacrificed. 			<content:encoded><![CDATA[<p>After eating and trying out chicken lettuce wraps from different restaurants, I wanted to try to make my own version.  The combination of having flavorful ground chicken with crisp iceberg lettuce is light, yet fulfilling.  With summer steadily approaching, I can see this recipe make for a great alternative to regular salads at picnics or barbecues.  </p>

<p><b>Ingredients</b><br />
1 Head of Iceberg Lettuce<br />
¾ Pounds of Ground Chicken<br />
3 Fresh Large Sage Leaves Chopped<br />
1 Cup of Whole Kernels of Corn<br />
½  Cup of Cup of Cubed Pancetta<br />
Salt<br />
Pepper</p>
<p><b>Steps</b><br />
To start things off, you’ll want to clean the lettuce and prepare it for later.  Separate some lettuce leaves and wash them in cold water.  The crispier the lettuce leaves are, the better they’ll work out for this recipe, so pick them out the best you can.  Once you have them washed, dry them off and set them aside for later.</p>

<p>Before getting started, chop 3-4 leaves of fresh sage for this dish.</p>
<p>Next, get a large skillet ready because it’s time to prepare the filling for the wraps.  Heat some olive oil over medium high heat.  Throw in the pancetta cubes and fry them for 2-3 minutes.  After they’re cooked, remove them from the pan and set them in a bowl for later.  </p>
<p>Make sure you still have enough olive oil to prevent the chicken from sticking to the pan.  Add in the ground chicken and keep stirring it constantly as it cooks.  </p>
<p>As the chicken is cooking, add in the corn, sage, and pancetta.  Take some salt and pepper to season the chicken mix.  Make sure to check that the chicken is fully cooked.  This should take around 15 minutes or more.  If you see any pink left in the chicken, keep cooking it through.</p>
<p>After chicken is done cooking, take spoonfuls of it and place them into the centers of the lettuce leaves.  You&#8217;ll be ready to serve them after that.  </p>
<p>The recipe is just a base for countless other variations.  Feel free to add more vegetables like chopped carrots or onions for color and flavor.  </p>

<p>Chicken.  You can fry, bake, barbecue, or broil it.  You can serve it in a soup, with a sauce, or by itself.  Every culture or region in the world has their own specialty dish that uses chicken as the main ingredient.  From Chicken Kiev to America’s own Southern Fried Chicken, we can agree that you can prepare chicken countless ways.  </p>
<p>In the Philippines, several restaurants have made millions of pesos off of severing chicken dishes.  Jollibee, Max’s House of Fried Chicken, The Aristocrat, and Classic Savory Chicken are a few restaurants that have followed this path. <p>Chicken D’Lite holds a special place in my heart for one reason.  Eating here reminds me of the Philippines.  When you first approach the restaurant and look at the menu, you will notice that they serve two styles of chicken.  That’s when it hit me.  They served chicken similar to Classic Savory Chicken’s fried chicken and The Aristocrat’s barbecued chicken.  It sparked a <i>I get to try two styles of my favorite comfort food that’s supposed to taste like the ones from restaurants in the Philippines, here in Newark, without flying across the Pacific Ocean to the Philippines!?</I> feeling.  Sign me up.    </p>

<p>The first style of chicken offered is a Classic Savory Chicken style, fried chicken that is served with a gravy sauce on the side.  Savory style refers to the mix of spices that season the chicken, which the Classic Savory Chicken restaurant is known for.  Juicy and tender meat is tucked beneath the crispy skin.  Dipping into gravy adds just a touch of more flavor to the meat.  The best part of Chicken D’Lite’s fried chicken is that it isn’t overly oily.  </p>

<p>If you aren’t in the mood for fried chicken, you can sample on The Aristocrat style, barbecued chicken.  Chicken D’Lite&#8217;s marinade used to flavor the chicken is similar to The Aristocrat’s.  It has a much sweeter taste than the Savory style fried chicken, and is served with a peanut sauce as opposed to the gravy.  The peanut sauce reminded me of a pork asado sauce, which contains some flavors of brown sugar and soy sauce.  The Aristocrat style chicken remains as juicy and tender as the Savory style.  You can’t go wrong with either.   </p>

<p>Chicken D’lite offers an unbelievable value for the price you pay for their combination meals.  Along with your choice of chicken, you receive a small cup of a rich macaroni soup (<i>sopas</i>), three pieces of meat egg rolls (<i>lumpia Shanghai</i>) with a sweet and sour dipping sauce, and on top of that, a heaping serving of rice.  </p>
<p>It was a very satisfying meal.  I left with a smirk on my face knowing that a little bit of the Philippines was this much closer to home.</p>

			<content:encoded><![CDATA[<p>So, I was up late one night watching The Food Network and a recipe caught my attention for a Roasted Chicken Pouch with Butter Sauce. The ingredients were simple. Prep and cooking time didn’t seem to take long at all. Most importantly it looked good. Start off with the following:</p>
<p><b>Ingredients</b><br />
Roasted Chicken (Using rotisserie chicken from the supermarket also works)<br />
Wonton Wrappers<br />
Ricotta Cheese<br />
Lemon Juice<br />
Hot Sauce<br />
Unsalted Butter<br />
1 Egg, Lightly Beaten<br />
Parmesan Cheese<br />
Salt<br />
Pepper<br />
Parsley Flakes</p>
<p><b>Steps</b><br />
First, you’ll want to shred the Roasted Chicken. Use your hands or a fork to pull apart the chicken. Throw the chicken into a bowl and combine the ricotta, lemon juice &#8211; to your taste, salt, pepper, and some hot sauce. Stir to combine.</p>
<p>Next, place a few wonton wrappers on a cutting board or any other dry surface. Place about a teaspoon of the chicken mixture into the center of the wonton wrapper. Make sure you don’t put too much of the mixture into the middle or you’ll have a hard time forming a pouch. Using a pastry brush or your fingers, brush the egg wash around the mixture. Bring all four corners of the wonton wrapper together and form the pouch. Make sure you tightly press the edges together so it won’t fall apart.</p>
<p>Now, bring a large pot of salted water to a boil over high heat. Once the water starts boiling toss in a few of the pouches, and let them cook. Don’t over crowd the pot you don’t want them sticking together. You’ll know they’re done once they float to the surface, this should only take about 3-5 minutes. Once done, transfer the pouches to a plate and set them aside.</p>
<p>Finally, melt some butter in a skillet or pan. Season the melted butter with pepper and salt, then set the heat to low, and add the cooked chicken pouches. Gently toss them around to evenly coat the pouches with butter. Place them on a plate sprinkle them with some parsley flakes and then grate Parmesan Cheese over the finished product.</p>

<p>Chicken Joy &#8211; This word automatically lights my eyes up and makes me picture the Philippines.  Every time I go back home to the Philippines, I must make a stop at Jollibee.  Over in the Philippines, Jollibee is the leading fast food restaurant.  They serve your traditional burger and fries, but the gem here is the fried chicken known as Chicken Joy.  The chicken is served with rice and brown gravy.  Already, you can tell that Jollibee isn&#8217;t your traditional fast food spot.</p>
<p>You don&#8217;t have to travel to the Philippines to get a taste of Jollibee.  They have expanded their operations and have opened branches in the United States.  The Union City, CA branch is the closest to where I live.  If you are close to one of their branches, you can try their fried chicken.  Another recommendation to try is the spaghetti.  They add a twist to the spaghetti, making it Filipino style, which has a much sweeter flavor to it.  </p>
<p>Did I mention that the desserts are tasty too?  The Peach Mango Pie puts McDonald’s Apple Pies to shame.  And if pies aren’t your thing, cool off with some Halo-Halo.  So, if you&#8217;re short on time and have to grab fast food, Jollibee&#8217;s variety in its offerings just might make it your pick.     </p>
<p><b>It&#8217;s a spot for dates because&#8230;</b><br />
Jollibee&#8217;s menu offerings are a nice change from the traditional fast food spots.</p>

<p>Sometimes you just don’t feel like eating at a restaurant and you want to just order takeout.  It allows you to just relax at home.  Wingstop might just be for you.  Wingstop offers several varieties of chicken wing flavors all ranging from traditional hot to garlic parmesan coated.  I had the chance to go see what they’re all about.</p>
<p>I ordered the garlic parmesan, barbeque, and Hawaiian flavored wings.  The dinner meal included a side of vegetables, two dips, and French fries.  The French fries that they served were topped off with a little bit of sugar to give it a distinct taste.  I can’t complain because they were good.  As for the wings, they were delicious.  All full of flavor.  My personal recommendation is the garlic parmesan wings.  You just might find your own favorite flavor when you go.   </p>
<p>I think the best part about Wingstop is that you can just enjoy them from the comfort of your own home.  So, if you are your date are all about staying in for the day, order takeout from Wingstop.  They try to offer you different wing packs so see if you can find the best one for two.  Wingstop has locations all over the United States.</p>

We know that sometimes you want to just stay in and relax at home.  Why not order some wings at Wingstop, pick up a movie, and enjoy them right at home?</p>
