Electrolux, Kelly Ripa, and Foodbuzz have partnered up to support awareness for the Ovarian Cancer Research Fund (OCRF). The OCRF’s mission is to fund research to find an early detection for ovarian cancer and to find a cure.

About Ovarian Cancer:
Ovarian cancer is the leading cause of death from gynecologic cancers in the United States and is the fifth leading cause of cancer death among U.S. women. The American Cancer Society estimates that 21,650 women will be diagnosed with ovarian cancer in the U.S. in 2008 and about 15,520 women will die from the disease. It is an insidious disease that can strike without warning or cause.

To support the awareness for the OCRF even more, Foodbuzz is donating $50 for every post about Banana Splits with the Top 9 Takeover. With the Top 9 Takeover, Foodbuzz will be showcasing 9 blog posts that feature the same theme. We wanted to support the cause, so we decided to join in.

To get into the spirit of summer, we decided to come up with a Filipino style banana split. Instead of regular bananas, we used Saba Bananas that have been wrapped in egg roll wrappers and then fried. These little fried banana rolls are called Turon in Filipino cuisine. The classic Filipino Turon adds in jackfruit to enhance the sweetness of the bananas. We opted to use Nutella Spread instead of jackfruit in our recipe, for that hint of chocolate.

Ingredients
Egg Roll Wrappers
Saba Bananas
Nutella Spread
Water
Brown Sugar
Vegetable Oil
Ice Cream of Your Choice

Steps

First, divide the bananas in half, and slice them again, sort of into long strips. Next, begin wrapping the bananas in the egg roll wrappers.

Spread a little bit of Nutella inside the egg roll wrapper before placing a slice of banana inside. The inspiration to use the Nutella in our Turon comes from having Turon from Patio Filipino in San Bruno, where they use chocolate in their version. Take a slice of the banana and coat it in some brown sugar, place it inside of the wrapper, and roll.

Seal wrapped bananas with a touch of water so that they don’t open up when you fry them.

In a large skillet over medium high heat, fry the wrapped bananas until they are golden brown on both sides. This should take about 2-3 minutes. Remove them from the skillet and place them on a plate with a paper towel to absorb the excess oil.

Keeping in with theme of the Filipino Banana Split, we paired the Turon with a scoop of Ube – purple yam and Mango Ice cream. Both of these can be found at your local Asian Market.

Just drizzle on some melted Nutella spread and sprinkle some nuts of your choice to top it off. And there you have it. Our twist on an American classic, summertime favorite…

If you too feel like joining in to support awareness for the Ovarian Cancer Research Fund, you can build your own banana split on Kelly Ripa’s website. For every virtual banana split submitted, Electrolux will donate $1 to the OCRF.

This salsa was featured in my Smoked Spanish Paprika and Cumin Spiced Barbecue Shrimp recipe. The only hard work with this recipe is chopping and slicing the ingredients going into the salsa. The easy part is that you just combine all of the ingredients together, refrigerate it, and take it out when you’re ready to use it.

Ingredients
1 Whole Mango
1 Whole Avocado
1/2 Red Onion
1 Kiwi
2/3 Cup Pineapple Juice
Salt
Pepper

Steps
Start by slicing the avocado. I find it easier to cut the avocado vertically and opening it to remove the seed. Take a spoon and scoop the meat out of the avocado. Now it’ll be easier for you to work with. Slice the avocado into strips.

Approach the kiwi with the same spoon scoop method, but instead of slicing, chop the kiwi.

Cut the mango next by slicing it vertically down by its seed. Slice the open face of the mango making a square pattern. Once you have this square pattern going, take a spoon to scoop the meat out.

Go ahead and chop the onion.

Combine the ingredients in a large bowl. Next, add in the pineapple juice. Season the salsa with a teaspoon of salt and pepper. Carefully toss the ingredients together and refrigerate it when you’re done.

Following these simple steps leaves you with salsa bursting with sweet flavors of mango and pineapple that you can pair with a variety of dishes.

Yesterday afternoon I went cherry picking at Chavez U-Pick Cherries in Brentwood. It was a warm sunny day and great to be outdoors. Being at the farm allowed you to pick out your own cherries. This way, you can try to look out for the more sweeter ones. The best part is, you’re supporting a local farm and having fun at the same time.

The cherries cost us $2.50 a pound. We bought about seven pounds. They are absolutely sweet, plump, and juicy. When we got home, I wanted to try to make a simple dessert with the cherries. Besides Egg Custard Pies, I don’t do much baked desserts. So, I went came up with a basic dough that is similar to Polvoron. Polvoron is a Filipino pastry treat that is made with flour, sugar, butter, and milk.

Ingredients
Cherries
1/2 Cup of Flour
4 Tbsp. Of Butter
1/2 Cup of Brown Sugar
2 Tbsp. of White Sugar
1 Tsp. of Cinnamon
A Pinch of Salt

Steps
Preheat your oven to 350°F.

Prepare the cherries by washing and pitting them. Cut the cherries in half and line them on a bottom of a 8×8″ baking dish or whatever sized baking dish you have on hand. Sprinkle the white sugar over the cherries.

Next, in a large mixing bowl, combine the dry ingredients with the butter. Mix everything until it forms together. After the dough has formed, take pieces of it and layer them over the cherries. Place the baking dish into the oven for 20-25 minutes.

You can serve the Baked Cherry Crumble in small ramicans or a plate.

The flavors of sweet and tangy cherries with the aroma of cinnamon will remind you of a cherry pie.

To start the New Year off, we wanted to make Crema de Fruita. It is a Filipino cake that can be enjoyed throughout the year. What better way to start off a New Year with this…

Graham Crackers and Mangos

Back in the Philippines our family used graham crackers for this this. They were easier to use and more readily available. Sometimes we just didn’t have time to bake a layer of sponge cake. If you do, you can substitute sponge cake or even pound cake for this recipe.

Ingredients
1 Pack of Graham Crackers
1 Can of Fruit Cocktail
3 Whole Mangos
1 Can of Cream
1 Can of Condensed Milk
1 3 Inch Deep Aluminum Baking Dish

Steps
Let’s prepare the canned fruit first. Strain the syrup from the fruit and set the syrup aside. We will use it later on. Then, cut your mangos. Three cuts should do it. You can scoop out the meat from the mango and mix it with the canned fruit. Set the fruit aside too.

In a bowl, mix together the cream and condensed milk. Whisk the two together until you don’t see any little clumps of cream.

When you have the two mixed together, take the baking dish and begin to lay out the graham crackers out. Then pour enough of the cream mixture on the first layer of graham crackers.

Next, take some of the fruit and spread it evenly across the cream layer.

For the next layers of graham crackers, take the strained syrup and coat the crackers. You can do this by placing the syrup on a plate and dipping the crackers on both sides. Create another bed of soaked crackers and repeat the previous steps. Your cake should have 3 layers of graham crackers – the bottom, a middle, and the top. The last layer of cream can be left plain just like below.

This gives you an opportunity to decorate the cake a little bit. You can crumble a few graham crackers over the last layer or use fruits to add a little presentation to your cake.

The final step is to freeze your cake overnight. Crema de Fruita is best served chilled. Cut the cake into small squares and serve.

The summer heat has hit us again. Cool off your day with this Strawberry and Blackberry Smoothie. We picked out the fruits at our local Farmers Market. They were very sweet. You may want to see if you have a Farmers Market near you. You can find plenty of fresh ingredients there.

Ingredients
6-8 Strawberries
4-6 Blackberries
1 Banana
1 Single Serving Cup of Strawberry Flavored Yogurt
Low Fat Milk
Sugar
Ice

Steps
Get your blender out and wash up the strawberries and blackberries. You will want to remove the stems off the strawberries. Next, slice the strawberries into halves. Cut your banana into smaller pieces as well. This will make things blend easier. Once you have that done it’s time to put everything into the blender.

You will want to add the strawberries, banana, and blackberries first. Next, pour in the strawberry yogurt. Pour about 1 cup of low fat milk. You will also add in 3-6 tablespoons of sugar. This is to add a little bit more sweetness into the smoothie. Finally, pour in the ice. We filled a tall glass up with ice cubes to use in this recipe. That will give you an idea of how much ice you may want to add. Hit that blend button after all the ingredients are in there.

Once it’s blended give it a taste. If it isn’t sweet enough, just add a little bit more sugar and re-blend. To serve, just pour out the smoothie into a tall glass and garnish with slices of strawberries. This one will keep you cool.

NewPark Mall Parking Lot By Macy’s
2086 NewPark Mall
Newark, CA 94560

What can I say? I never thought a spot like this would be classified as a spot for dates, but it sure is. The Farmers Market in Newark, CA has a lot to offer. If you’re looking to buy some fresh produce for that meal you’re cooking up, you’ll find it here. You’ll be supporting local farmers while doing it. You can find an array of vegetables and fruits. Some farmers give you the option to get purchase organic grown food from their stands as well. The best part is that if you’re shopping for fruits, most farmers will give out free samples for you to enjoy. I ended up buying a bulk of delicious white peaches the last time I was there because of trying some samples.

Just take a walk around and see what farmers are offering. Sometimes you’ll find produce that the bigger grocery stores don’t offer. A good thing to keep in mind are the prices too. You won’t be hurting your wallets here. You’ll find most of the food here is priced lower than your local grocery store. I feel that the prices I pay here justify the quality I’m getting in return.

Finally, you will get a chance to see local food vendors here as well. Everything from home made pasta sauces, pastries, and cakes can be found just by taking a walk around. They even had a Filipino food vendor there where I ordered a cup of fresh cantelope juice. It’s one of my favorite Filipino drinks that I enjoy. You will not have an excuse to leave this place hungry.

If you have a Saturday or Sunday morning to spare, come make a stop at the Farmers Market in Newark, CA. You will find it right in the parking lot in front of Macy’s.

It’s a spot for dates because…
You can find great produce to buy here, especially if you’re planning to cook that meal for two together. If you didn’t find anything at the Farmers Market, you could always take a look at what NewPark Mall has.
